It feels SO GOOD to be eating healthy again. I was very disappointed with all the weight I gained back after losing 130+ pounds in 10 months, but now I'm back into a pattern of eating healthy.
For the past two years Kathy and I lived about 15 miles from work and, with her not being licensed to drive, it meant we were never home. We couldn't afford the gas for me to drive home after work and go back to get her when she got out. We fell into a pattern of eating on the go, and usually crap like fast food (and I mean burgers, not salads - trying eating one of those while driving!) and other unhealthy prepared foods. We also couldn't afford time to go shopping before the store closed or gas money to bring the food home then go back to Plymouth.
Now, even though still 15 miles from home, we're living with Lonewolf and Seeker again. I am extremely grateful to Lonewolf for driving Kathy to and from work half the week. They have fairly similar schedules on two or three days of the week. Kathy and I also have a couple of days that are compatible. This means we have ample time for shopping, plenty of money to budget for food now that we're not overspending on junk food and sufficient time to prepare and/or cook meals.
I'm back in the habit of eating an omelet every morning for breakfast accompanied by a bottle of Fruit2O with psyllium husks and a tall glass of water. I also love the fact that Hannaford has so many hot pepper varieties for very cheap, so my omelets are fairly diverse and include a different hot pepper every time, ranging from the very tame cherry hot up to my favorite habanero and Hungarian wax. I've also found the Hungarian wax to be very tasty grilled and atop a turkey or beef burger (no bun, of course) and topped with extra sharp cheddar. The only caution I have for those interested in trying a habanero omelet: it burns just as much leaving as it did entering. Food for thought.
I've been keeping myself properly hydrated. It's done wonders for my legs and the swelling is reducing. Hopefully within the next couple months they should return to normal.
Next I have to get back into exercising. It should be easier now that Lonewolf is around. He and I used to make a regular copperative effort of it. It was an excellent bonding experience and I look forward to it if for nothing else than just the companionship of a good friend. Plus he doesn't let me get away with going easy on myself. ;)
In the meantime, I have to figure out how to register to vote in my new town. Today is the one weekly two-hour block the Town Clerk is available so I have to take full advantage. Enjoy the day!
