I've managed to cut out more meat from my diet, but only in parts. I'm not turning entirely vegetarian, but I'm down to only having actual meat once a day, provided my latest plan works. The basic rule is that whenever one consumes carbohydrates, one should have one serving of protein or one serving of fat to slow down the conversion of that carbohydrate into sugars that trigger insulin production, which then becomes fat.

For morning I have two eggs and one serving of fruit or vegetable for breakfast. Eggs are actually a good source of protein. Sometimes I add cheese if I make an omelet.

For a snack I usually have a serving of nuts, cheese, or cottage cheese with one serving of fruit.

For lunch it's usually a salad with some sort of protein (in the past meat), shredded cheese and salad dressing for fat.

I occasionally have a snack between lunch and dinner, as well. It might usually be either more fruit and protein or three cups of popcorn (hold the butter) and a protein.

For dinner it's usually 6 oz. of meat with steamed veggies.

For lunch now I'm going to try avocado in place of meat so I get good fats instead of the meat. I may also add sliced raw almonds to add some protein and calcium and get rid of the shredded cheese. We'll see how it goes. I don't care for avocado alone, but I'm hoping I might like it more in salad.

EDIT: Avocado in the salad is a go! It didn't gross me out like plain avocado does and blended in nicely.

Avacado can vary greatly. If it's firm, sliced on salad is good. If it's mushy, it can get a bit battered by that use. Mushed avacado is a good swap for Mayo for some sandwiches, or there's guacamole if it's really ripe.

I don't think I'd want to go 100% veggie, and probably not vegan. I do like meat, but I also realize that the industry makes a huge impact on the environment and the animals are not always humanely raised. I could see it being moved to 'treat' status, as a side or such, not the pivot point of a meal.

But I also know that I need to watch my carbs, and I really shouldn't eat many, so that leans me towards the meats/greens side of things. :/

I hadn't thought of mashed avocado or guacamole on a sandwich. That sounds great! I love guacamole. I rarely eat sandwiches, but I'll have to remember that. Thanks!

I'm totally with you on not being 100% vegetarian or vegan. I don't think I could do it. Every once in a while I need a nice steak or chicken breast or turkey. The three biggest reasons I want to reduce my meat consumption are: 1) as you pointed out the industry has a huge negative impact on the environment, as well as our health (unsafe meat packaging/slaughter practices, poor handling); 2) we as Americans tend to eat far too much meat and it really isn't healthy for our bodies, never mind that the bulk consumption of meat contributes to the environmental impact of the industry; and 3) meat is a huge portion of our groceries budget, so if we get our portions of meat under control we get our grocery spending under control, too.

My hope is that if we're consuming less meat, we'll be able to afford to return to eating meat from local producers that don't send their meat to industry packing plants for processing because 1) it's more environmentally friendly being local and not mass-produced, 2) it's healthier because it's handled properly, and 3) it supports the local economy rather than supporting huge corporations.

I can imagine it must be difficult for you considering all of the health considerations you have to make with your diet. :(
